Keto Thai Rice

Keto Thai Rice can be made with any protein of choice. You could use eggs, chicken, prawns, beef, or even tofu. As always when we talk about rice on Keto we’re referring to cauliflower rice.   

Fried rice is a universal dish across Asia and every country has its own unique spin on it. I mean if you’ve tasted Indian Chinese you’ll know that our fried rice tastes totally a unique. You can also make this fried rice vegetarian by swapping the fish sauce for soya sauce and replacing the pork with tofu.

You can fry up the tofu and get it nice and caramelized or could also use ground meat with this. We should always grate cauliflower and prepare fresh cauliflower rice. Literally you can make your delicious keto stir fry rice in a few minutes!

This version of keto Thai rice is really tasty, not even mentioning the nutritional value of cauliflower instead of rice. You can have so many version of keto Thai rice in your own way.

Ingredients

For the fried rice

  • 150 g Cauliflower
  • 50 g Oyster Mushrooms
  • 50 g Bok Choy
  • 5 g garlic
  • 7.5 g Spring Onion
  • 10 g Red onion
  • 0.50 teaspoon Sesame Oil
  • 1 teaspoon Soya Sauce, 1teaspoon Fish Sauce
  • one egg
  • ½  teaspoon White Pepper
  • Pink Himalayan Salt to Taste

For the sauce 

  • 1 tablespoon Fish Sauce
  • 2 Chilies
  • Juice of half a lime

Instructions
  1.  To make the sauce first, just chop the chilies and add it to the fish sauce and squeeze in the lime juice. Mix well and set aside.
  2. Rice the cauliflower using your food processor or with a grater and then transfer to a microwaveable bowl and microwave for 10 minutes after seasoning with salt.
  3. Wash and clean the bok choi and separate the stems from the leaves. Roughly chop the leaves and set aside. Slice the stems and keep aside separately.
  4. Heat the oil in a wok and add in the bok choy stems and fry them till tender. Then add in the garlic and cook till golden brown.
  5. Add in the oyster mushrooms and stir fry on high heat. 
  6. Take a  bowl and crack in 2 eggs. Scramble the eggs once they start cooking and then mix everything well
  7. Add in the cooked cauliflower rice and give everything a good mix. Slice the onions and add them in along with the bok choy leaves. Also season with 1 tsp fish sauce, 1 tsp soya sauce, and 1/2 tsp black pepper.
  8. Give everything a good mix and cook till the onions soften and the bok choy leaves wilt. Then finish with the spring onion and the sesame oil.
  9. Serve the rice with the sauce.
