This baked fish with lemon sauce is one of the easiest meals that you can make! Lemon Sauce Fish cooks quickly so this is perfect for a last-minute dinner when you just don’t have the prep time in the middle of a busy work week.

Perfectly dehydrated salmon is cooked until tender and then paired with a delicious creamy sauce, flavored with fresh herbs and a hint of lemon. Pair it with sautéed spinach, and you\’ve got yourself an irresistible keto meal!

High fat has never been easier to achieve than with a lemon butter caper sauce poured over your favorite fish fillet. This recipe uses a decent amount of butter and will help you hit all your fat macros.

Fish adds beauty to this sauce since it’s nice light meat and the lemon and fresh parsley help cut through the richness of the butter. Even though this is a rather simple dish it’s extremely ‘posh’ and perfect when having friends over for dinner.

Ingredients

For Sauce and salmon-
60 ml of vegetable stock
80 g heavy whipping cream
½ tbsp fresh chives, finely chopped
1 tbsp fresh parsley, finely chopped
¼ lemon juice
½ tsp xanthan gum, divided (optional)
ground black pepper, to taste
200 g salmon
Serving-
½ tbsp butter
½ lb fresh spinach
salt and pepper

Instructions:

Place the vegetable stock into a saucepan and bring to a boil. Boil for a few minutes until the stock reduces slightly.
Now, add the cream, herbs, and lemon juice and stir to combine.
Sprinkle half of the xanthan gum over the surface and whisk to combine. Cook for a minute to allow the gum to thicken. Add the second half of the xanthan gum if you want your sauce thicker. Keep sauce warm, stirring occasionally, while you cook the salmon.
Now Heat a non-stick frying pan over high heat. Do not add butter or oil. Place the salmon in the pan, skin side up, and press down firmly to sear the full surface and stop it curling up. Sear for 3-4 minutes and then flip and cook for 3-4 more minutes. You want your salmon to be crisp on the outside and still tender and pink inside. Keep warm.
Sauté the spinach in butter until it’s wilted, about 2 minutes. Season with salt and pepper.
Serve immediately.
