These gluten-free chocolate coconut cupcakes are topped with whipping cream and shredded coconut for a delicious dessert any coconut lover will enjoy!!<\/span><\/p>\n<h4><strong>Ingredients<\/strong><\/h4>\n<h6><span style=\"font-weight: 400\">For the cake<\/span><\/h6>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/3 cup cocoa powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">125g unsalted butter, room temperature<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">6 eggs, separated<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/3 cup granulated sugar<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 cup coconut flour<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 teaspoon baking soda<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 teaspoon baking powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/4 cup milk<\/span><\/li>\n<\/ul>\n<h6><span style=\"font-weight: 400\">For the ganache<\/span><\/h6>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">50mls 35% (whipping) cream<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">75g semi-sweet chocolate chips<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tablespoon unsalted butter<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">coconut for sprinkling<\/span><\/li>\n<\/ul>\n<h6><b>Instructions<\/b><\/h6>\n<p><span style=\"font-weight: 400\">For the cake<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pre-heat oven to 350\u02daF\/ 180\u02daC.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Prepare 12 muffin tins with paper liners.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Now, in a microwave or in a small saucepan on medium-high heat, melt the butter and cocoa powder. Set aside to cool slightly.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">In a medium bowl, whip the egg whites until they form stiff peaks.
