The onion and the curd base of the gravy provide it with a blanched flavour owing to their respective <\/span><span style=\"font-weight: 400\">sweet and sour flavour notes.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Although it might seem a little complicated, this delicious Indian gravy is fairly easy to cook and can be enjoyed with naan, roti and even rice.<\/span><\/p>\n<p><span style=\"font-weight: 400\">So here\u2019s how you can cook cheesy paneer kali mirch easily at home!<\/span><\/p>\n<h3><\/h3>\n<h3><strong>Ingredients<\/strong><\/h3>\n<h5><strong>General Ingredients:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Ghee (2 tbsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Whole black pepper (\u00bd tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 small Indian bay leaf (tej patta)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Caraway seeds (\u00bd tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Fresh full-fat curd (\u00bd cup- beaten)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Red chilli powder (\u00bc tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Garam masala (\u00bc tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Coriander powder (\u00bd tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Water (as required. \u00bd cup recommended)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Salt (as per taste)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Cubed paneer (200g)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Cream (2tbsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Kewra or rose water (1 tsp)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Mint leaves for garnish<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Coriander for garnish<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Crushed black pepper for garnish (\u00bc tsp)<\/span><\/li>\n<\/ul>\n<h5><strong>Onion Paste:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Cinnamon stick (1 inch)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 green cardamoms<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2 cloves<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1-2 single mace strands<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Chopped Onion (\u00bd cup)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bd inch ginger (chopped)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3 garlic cloves (chopped)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 green chilli (chopped)<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">10-12 cashews<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u2153 &#8211; \u00bd cup of water<\/span><\/li>\n<\/ul>\n<h3><strong>Instructions<\/strong><\/h3>\n<h5><strong>Prep:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Crush the whole black peppers (\u00bd tsp) in a mortar and pestle and keep aside.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Beat the full-fat curd (\u00bd cup) till its texture is very smooth and keep aside<\/span><\/li>\n<\/ul>\n<h5><strong>Onion Paste:<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Heat the ghee in a Kadai (heavy pan).<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Once the ghee is well heated add the <\/span><span style=\"font-weight: 400\">cinnamon,\u00a0 green cardamoms,\u00a0 cloves and single mace strands and saut\u00e9 till it starts to crackle.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add the onions and saut\u00e9 on a low-medium flame till they are light golden\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Once the onions are a nice light golden colour, add the chopped ginger, chopped garlic, green chilli and cashews<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Mix and stir well till the onions are nice and golden<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Set this onion mixture aside to cool down before putting it in a grinding jar. Add \u2153-\u00bd a cup of water to the grinding jar and grind the onions into a smooth paste and set aside.<\/span><\/li>\n<\/ul>\n<h5><strong>Paneer Kali Mirch<\/strong><\/h5>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Using the same pan you used to cook the onions, add 2 tsp of ghee to the empty pan and let it heat well.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add the Indian bay leaf and the caraway seeds to the pan once heated well and saut\u00e9 till the caraway seeds start to crackle.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add the onion paste to the pan and let it cook well for 4-5 minutes on a low flame.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">On the side, add \u00bd a cup of water to the jar in which the onions were ground and shake well. Set this onion paste mixed water aside to add to the gravy later.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Saut\u00e9 the onion paste till the ghee starts to separate from the sides of the paste<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Once you see the ghee separate add the black pepper you had crushed and mix well for about a minute.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Now you add the red chilli powder, garam masala powder and coriander powder. Mix and saut\u00e9 for one minute more.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Switch the flame off and add the curd to the pan. As soon as you add the curd, be sure to mix it really well with the onion paste whilst also adding the onion paste water mixture from the grinding jar.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Switch on the stove on a light flame again and bring the gravy to a simmer.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add salt for taste<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Continue to let the gravy simmer for a few minutes (till you see specks of ghee on the top).
