class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Take the bitter gourd and scrape lightly with a knife.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Now make a vertical slit from top to the bottom and scoop out the flesh and seeds of the karela.<\/div>\n<\/li>\n<li id=\"wprm-recipe-9457-step-0-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Discard the seeds. To reduce the bitterness of karela, apply some salt both inside and outside and keep aside for half an hour.<\/div>\n<\/li>\n<li id=\"wprm-recipe-9457-step-0-2\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">After half an hour, wash the karelas off all the salt, dry, and keep aside. Either microwave the karelas for about 2 minutes to slightly cook them or parboil them with some tamarind paste (about \u00bc tsp.) for 2-3 minutes for the same effect.<\/div>\n<\/li>\n<\/ol>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<p class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\"><strong>Prepare the stuffing<\/strong><\/p>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-9457-step-1-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Take 1 tsp. mustard oil in a kadhai. Add sliced onions and ginger garlic paste and fry till golden brown. Now blend into a thick paste when it cools down. Add all the spice powders, salt, and tamarind pulp and cook some more. Let the stuffing be thick. Check the taste and adjust seasoning. Let the stuffing cool down completely.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<p class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\"><strong>Prepare the karelas<\/strong><\/p>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-9457-step-2-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Now take the split karelas and spoon the stuffing inside generously. To prevent the karelas from opening up while frying. Tie the normal sewing thread around them to keep them intact (especially when shallow frying).<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<p class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\"><strong>For Air frying<\/strong><\/p>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-9457-step-3-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Preheat Air fryer at 200 C or 390 F for 5 minutes. Spray or brush oil on Air fryer basket.<\/div>\n<\/li>\n<li id=\"wprm-recipe-9457-step-3-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Lay the filled karelas on the basket and Air fry for about 6-8 minutes till the karelas are golden brown and slightly crisp. Keep checking every 3-4 minutes. Take them out and serve hot with Rotis.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<div class=\"wprm-recipe-instruction-group\">\n<p class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\"><strong>For shallow frying<\/strong><\/p>\n<ul class=\"wprm-recipe-instructions\">\n<li id=\"wprm-recipe-9457-step-4-0\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Heat some more mustard oil. Add fenugreek seeds and allow them to sputter. Shallow fry the karelas on both sides on a low flame till they are well cooked and brown in color. You can cover the kadhai when they are cooking.<\/div>\n<\/li>\n<li id=\"wprm-recipe-9457-step-4-1\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Serve them hot with chapatis and dal.\u00a0 They are delicious.<\/div>\n<\/li>\n<\/ul>\n<\/div>\n<\/div>\n<div class=\"wprm-recipe-notes-container wprm-block-text-normal\">\n<h6 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\">Notes<\/h6>\n<div class=\"wprm-recipe-notes\">\n<ol>\n<li>Always choose dark green and small bitter gourd with a thinner skin for stuffing karelas.<\/li>\n<li>Air frying helps in really reducing the need to use a lot of oil for crispy stuffed karelas.<\/li>\n<li>Ensure that the stuffing is thick and if you are shallow frying using a thread to close each karela is very helpful.<\/li>\n<li>To further reduce the bitterness of karela, you can cook them in a pan with tamarind water (use \u00bd tsp. tamarind paste)f for about 2-3 minutes. This helps in making them less bitter. Parboiling karela in this manner reduces the Air frying time as well. But make sure you don&#8217;t overcook karelas so that they become too soft. They must still have a bite.<\/li>\n<li>\u00a0You may add the flesh and scraped skin of karela to the onion filling mixture. Avoid it because it gets very bitter in taste.<\/li>\n<\/ol>\n<\/div>\n<\/div>\n<h6 class=\"wprm-recipe-header wprm-recipe-nutrition-header wprm-block-text-bold wprm-align-left
