It will take around 40-45 minutes to make these delectable muffins.<\/span><\/p>\n<p>&nbsp;<\/p>\n<h6><strong>Ingredients<\/strong><\/h6>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3 eggs<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">100 g cream cheese, softened<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">50 g butter, softened<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bd cup sweetener<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bd cup almond flour<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00bc cup coconut flour<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp baking powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp vanilla extract<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">zest of 1 lemon<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">100 g blueberries (fresh or frozen)<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h6><strong>Instructions<\/strong><\/h6>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Preheat the oven to 160C\/320F. Grease and line your muffin trays. We prefer to use silicone muffin trays to avoid the muffins sticking, which does happen with low carb baked goods<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Line all the ingredients except the blueberries into a blender and blend for 1-2 minutes until the mixture is smooth and all the cream cheese and butter is combined<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Detach the mixture from the blender and place it in a bowl. They will be good to eat for 7-10 days out of the fridge. Some recipes do require storing in the fridge due to their high moisture content compared to traditional pastries and baked goods.
