If you don\u2019t have udon for this recipe, use rice noodles or regular old spaghetti.<\/p>\n<h5>Here is the quick recipe for Ginger Chicken Noodle Soup:<\/h5>\n<p>Prep: 10 mins | Cook: 30 mins | Easy Serves 2<\/p>\n<h5>Ingredients<\/h5>\n<ul>\n<li>900ml chicken or vegetable stock (or Miso soup mix)<\/li>\n<li>1 boneless, skinless chicken breast (about175g)<\/li>\n<li>1 tsp chopped fresh ginger<\/li>\n<li>take 1 garlic clove, finely chopped<\/li>\n<li>50g rice or wheat noodles<\/li>\n<li>2 tbsp sweetcorn, canned or frozen<\/li>\n<li>2-3 mushrooms, thinly sliced<\/li>\n<li>take 2 spring onions, shredded<\/li>\n<li>2 tsp soy sauce, plus extra for serving mint or basil leaves and a little shredded chili (optional), to serve<\/li>\n<\/ul>\n<h6>Instructions<\/h6>\n<ol>\n<li>Pour the stock into a pan and add the chicken breast, ginger, and garlic.<\/li>\n<li>Bring to the boil, then reduce the heat, partly cover, and simmer for 20 mins, until the chicken is tender.<\/li>\n<li>Put the chicken on a board and shred it into bite-size pieces using a couple of forks.<\/li>\n<li>Return the chicken to the stock with the noodles,<br \/>\nsweetcorn, mushrooms, spring onion, and soy sauce.
