The vegan version of this uses tofu, beans and chickpeas. Here we have used chickpeas.<\/span><\/p>\n<p><em><strong>Prep Time= 10 mins | Cook Time= 17 mins\u00a0 | Total Time= 27 mins<\/strong><\/em><\/p>\n<p><em><strong>Serving= 4 | Calories= 196 kcal<\/strong><\/em><\/p>\n<h3><b>Ingredients to make vegan chilaquiles-<\/b><\/h3>\n<h4><span style=\"font-weight: 400\">Chilaquiles:<\/span><\/h4>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp oil<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 small onion finely chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">5 cloves of garlic finely chopped<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">42 g chopped carrots<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">425 g can chickpeas or 1.5 cup cooked<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">3\/4 tsp\u00a0 ground cumin<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 tsp coriander powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 tsp paprika, dried oregano and garlic powder<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">a good dash of cinnamon<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">salt as per taste<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">2\u00a0 tortillas or 1.5 cups tortilla chips<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Some chopped onion, coriander and lime juice for garnishing<\/span><\/li>\n<\/ul>\n<h4><span style=\"font-weight: 400\">Red Sauce:<\/span><\/h4>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">\u00a0(65.5 g) tomato paste<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1 (1 ) tomato<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">250 ml\u00a0 water<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">1\/2 tsp\u00a0 ground cumin<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">half of the onion garlic mixture from above<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">salt as per taste<\/span><\/li>\n<\/ul>\n<h3><b>Instructions-<\/b><\/h3>\n<ol>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Heat oil in a frying pan over medium heat.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Saute onion, garlic and carrots with a pinch of salt. Stir occasionally and cook until golden. Remove half of the mixture for the red sauce.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add chickpeas and spices to the mixture. You can add red chili to make it more spicy. Mix everything well and cover it. Let it cook for 4 to 5 minutes so that chickpeas get coated with spices and pick up the flavor.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Meanwhile make the red sauce:- Blend all the ingredients and reserved onion garlic carrot mixture until smooth. Your red sauce is ready. Set it aside.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Add tortilla chips or crisped sliced tortillas to the chickpeas mixture.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pour the red sauce over the mixture. Mix everything properly and bring to a boil.
