Huevos rancheros is a vegetarian Mexican breakfast with eggs, tortillas, and salsa. The recipe yields 4 hearty but modest servings of one tortilla and egg each, so multiply the recipe if necessary.<\/p>\n<\/div>\n<h4>Ingredients<\/h4>\n<div id=\"structured-ingredients_1-0\" class=\"comp structured-ingredients\">\n<ul class=\"structured-ingredients__list text-passage\">\n<li class=\"structured-ingredients__list-item\">1\u00a0tablespoon\u00a0extra virgin olive oil<\/li>\n<li class=\"structured-ingredients__list-item\">1\/2\u00a0medium\u00a0onion, chopped<\/li>\n<li class=\"structured-ingredients__list-item\">take 1 (15-ounce) can of whole or crushed tomatoes, preferably fire-roasted, or 1 to 2 large fresh tomatoes, when in season<\/li>\n<li class=\"structured-ingredients__list-item\">1\/2 (6 ounces) can dice green Anaheim chilis<\/li>\n<li class=\"structured-ingredients__list-item is-optional\">Chipotle chili powder, adobo sauce, or ground cumin to taste, optional<\/li>\n<li class=\"structured-ingredients__list-item\">4\u00a0corn tortillas<\/li>\n<li class=\"structured-ingredients__list-item\">Butter<\/li>\n<li class=\"structured-ingredients__list-item\">4\u00a0large\u00a0eggs<\/li>\n<li class=\"structured-ingredients__list-item is-optional\">2\u00a0tablespoons\u00a0fresh\u00a0cilantro, chopped, optional<\/li>\n<\/ul>\n<h4>Instructions<\/h4>\n<ol id=\"mntl-sc-block_1-0\" class=\"comp mntl-sc-block-group--OL mntl-sc-block mntl-sc-block-startgroup\">\n<li id=\"mntl-sc-block_1-0-1\" class=\"comp mntl-sc-block-group--LI mntl-sc-block mntl-sc-block-startgroup\">\n<h6 id=\"mntl-sc-block_1-0-2\" class=\"comp mntl-sc-block lifestyle-sc-block-subheading mntl-sc-block-subheading\"><strong><span class=\"mntl-sc-block-subheading__text\">Make the sauce:<\/span><\/strong><\/h6>\n<p id=\"mntl-sc-block_1-0-3\" class=\"comp mntl-sc-block mntl-sc-block-html\">Saut\u00e9 the onions in a little olive oil in a large skillet on medium heat. Once the onions are translucent, add the tomatoes and their juices. If using whole canned tomatoes, break them up with your fingers or a spatula as you put them in the pan.<\/p>\n<p id=\"mntl-sc-block_1-0-4\" class=\"comp mntl-sc-block mntl-sc-block-html\">If you are using fresh tomatoes, chop them first, then add. Note that fresh tomatoes will take longer to cook as canned tomatoes are already cooked, to begin with.<\/p>\n<p id=\"mntl-sc-block_1-0-5\" class=\"comp mntl-sc-block mntl-sc-block-html\">Add chopped green chilies. Add additional chili to taste, either chipotle chili powder, adobo sauce, regular chili powder, or even ground cumin.<\/p>\n<p id=\"mntl-sc-block_1-0-7\" class=\"comp mntl-sc-block mntl-sc-block-html\">Bring to a simmer, reduce heat to low, and let simmer while you do the rest of the cooking, stirring occasionally. Reduce to warm after it has been simmering for 10 minutes. Add salt to taste if needed.<\/p>\n<div id=\"mntl-sc-block_1-0-8\" class=\"comp mntl-sc-block mntl-sc-block-adslot mntl-block\"><\/div>\n<\/li>\n<li id=\"mntl-sc-block_1-0-10\" class=\"comp mntl-sc-block-group--LI mntl-sc-block mntl-sc-block-startgroup\">\n<h6 id=\"mntl-sc-block_1-0-11\" class=\"comp mntl-sc-block lifestyle-sc-block-subheading mntl-sc-block-subheading\"><strong><span class=\"mntl-sc-block-subheading__text\">Warm the plates:<\/span><\/strong><\/h6>\n<p id=\"mntl-sc-block_1-0-12\" class=\"comp mntl-sc-block mntl-sc-block-html\">Heat the oven to a warm 150\u00b0F, and place serving plates in the oven to keep warm.<\/p>\n<div id=\"mntl-sc-block_1-0-13\" class=\"comp mntl-sc-block mntl-sc-block-adslot mntl-block\"><\/div>\n<\/li>\n<li id=\"mntl-sc-block_1-0-15\" class=\"comp mntl-sc-block-group--LI mntl-sc-block mntl-sc-block-startgroup\">\n<h6 id=\"mntl-sc-block_1-0-16\" class=\"comp mntl-sc-block lifestyle-sc-block-subheading mntl-sc-block-subheading\"><strong><span class=\"mntl-sc-block-subheading__text\">Prepare the tortillas:<\/span><\/strong><\/h6>\n<p id=\"mntl-sc-block_1-0-17\" class=\"comp mntl-sc-block mntl-sc-block-html\">Heat a teaspoon of olive oil in a large non-stick skillet on medium-high, coating the pan with the oil.<\/p>\n<p id=\"mntl-sc-block_1-0-18\" class=\"comp mntl-sc-block mntl-sc-block-html\">One by one (or more if your pan is big enough) heat the tortillas in the pan, for a minute or two on each side, until they are heated through, softened, and pockets of air bubble up inside of them.<\/p>\n<p id=\"mntl-sc-block_1-0-20\" class=\"comp mntl-sc-block mntl-sc-block-html\">Then remove them and stack them on one of the warming plates in the oven to keep warm while you continue cooking the rest of the tortillas and the eggs.<\/p>\n<div id=\"mntl-sc-block_1-0-21\" class=\"comp mntl-sc-block mntl-sc-block-adslot mntl-block\"><\/div>\n<\/li>\n<li id=\"mntl-sc-block_1-0-23\" class=\"comp mntl-sc-block-group--LI mntl-sc-block mntl-sc-block-startgroup\">\n<h6 id=\"mntl-sc-block_1-0-24\" class=\"comp mntl-sc-block lifestyle-sc-block-subheading mntl-sc-block-subheading\"><strong><span class=\"mntl-sc-block-subheading__text\">Fry the eggs:<\/span><\/strong><\/h6>\n<p id=\"mntl-sc-block_1-0-25\" class=\"comp mntl-sc-block mntl-sc-block-html\">Using the same skillet as was used for the tortillas, add a little butter to the pan, about two teaspoons for 4 eggs. Heat the pan on medium-high heat. Crack 4 eggs into the skillet and cook for 3 to 4 minutes for runny yolks, and more for firmer eggs.<\/p>\n<div id=\"mntl-sc-block_1-0-27\" class=\"comp mntl-sc-block mntl-sc-block-adslot mntl-block\"><\/div>\n<\/li>\n<li id=\"mntl-sc-block_1-0-29\" class=\"comp mntl-sc-block-group--LI mntl-sc-block mntl-sc-block-startgroup\">\n<h6 id=\"mntl-sc-block_1-0-30\" class=\"comp mntl-sc-block lifestyle-sc-block-subheading mntl-sc-block-subheading\"><strong><span class=\"mntl-sc-block-subheading__text\">Assemble and serve:<\/span><\/strong><\/h6>\n<p id=\"mntl-sc-block_1-0-31\" class=\"comp mntl-sc-block mntl-sc-block-html\">To serve, spoon a little of the sauce onto a warmed plate. Top with a tortilla, then a fried egg.
