Drizzle olive oil on top. Sprinkle salt and pepper. Bake at 450\u00b0 for 10-20 minutes, or until tender. Cooking time will depend upon the thickness of the vegetables.<\/div>\n<\/li>\n<li id=\"wprm-recipe-21639-step-0-3\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\"><i>Roasted Garlic Mayo:<\/i>\u00a0slice about \u00bd&#8221; off a head of garlic (the pointy end), exposing the cloves, and leaving the skin on.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Put the garlic in aluminum foil and drizzle olive oil on top. Cover the garlic with aluminum foil.<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Roast at 450\u00b0 for 35-40 minutes, or until tender.<\/div>\n<\/li>\n<li id=\"wprm-recipe-21639-step-0-4\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Squeeze garlic cloves out, mash with a fork, and mix in\u00a0vegan mayo.<\/div>\n<\/li>\n<li id=\"wprm-recipe-21639-step-0-5\" class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">Spread garlic mayo on a slice of bread. Layer vegetables on the other slice.\u00a0Sprinkle chopped basil on top.
