If you\’re feeling like you’re slacking on those veggies, go ahead and try this delicious \”frittata with vegetables\” recipe. The fact that frittatas are packed with flavour whilst also being easy to make, makes them a very desirable choice of dish for a meal.

 A Frittata is a dish that doesn\’t necessarily have a specific time of consumption during the day, meaning that you can have them for breakfast through to dinner. Moreover, it need not necessarily be consumed hot out of the oven, frittatas also taste great when they are warm or even slightly cold.

Below is the recipe to this healthy, delicious and easy to cook veggie packed frittata:

Ingredients

  • Olive Oil (1 tbsp)
  • 1 Onion (finely chopped)
  • Minced garlic (1 tsp)
  • 1 red bell pepper (finely chopped)
  • 1 carrot (grated)
  • Broccolini (190g)
  • Peas (1 cup)
  • 6 eggs
  • Whole milk/ cream (2 tbsp)
  • Cheddar cheese (½ cup)
  • Dried oregano (1 tsp)
  • Salt (As per taste)

Instructions

  • Start with preheating the oven at 220c
  • Whisk the egg, milk, cheese, herbs and seasoning together in a mixing bowl and set aside
  • Now heat oil in a cast iron pad and add the garlic and onion. Cook for 5 mins
  • Now add in the bell pepper and carrot and continue cooking for 1 more minute
  • Add in the broccolini and continue cooking for a further minute. After this, add in the pear and continue stirring.
  • Now pour in the whisked mixture into this cast iron pad with the vegetables and spread evenly
  • For about 1-2 mins cook on stove top until you see the colour on the edge of the frittata lighten in colour
  • Now transfer the pan into the oven and cook for 8-10 mins. Ideally you should remove the frittata from the oven when it is slightly jiggly or just set. Do not cook any more than that.
  • Let the dish cool down and set for 5 mins. Your frittata is ready to be sliced and served!
