KETO PROTEIN CHOCOLATE CHIP COOKIES Recipe-

Gluten-free, keto-friendly, chocolate chip protein cookies are ready in just half an hour.

INGREDIENTS
  • 2 scoops of Unflavored Whey Protein
  • 1/3 cup of coconut flour
  • ¾ teaspoon of baking powder
  • ½ teaspoon of xanthan gum
  • ¼ tsp of salt
  • 1/4 cup of peanut butter powder
  • 2 tablespoons of softened coconut oil 
  • 1 tbsp of unsalted butter
  • 2 tablespoons of peanut butter
  • 1 large egg
  • ¼ cup of unsweetened milk of choice
  • 1 tsp of vanilla extract
  • ¼ cup of monk fruit sweetener or stevia
  • ⅓ cup of sugar-free chocolate chips

INSTRUCTIONS
  • Warm oven to 350°F and line a baking sheet with parchment paper then set aside.
  • Now add dry ingredients to a small bowl (whey, coconut flour, baking powder, xanthan gum, peanut butter powder, and salt) and whisk well to combine.
  • To this, add coconut oil, butter, and sweetener to a large bowl or stand mixer. Beat well until light and fluffy, then add egg, vanilla extract, peanut butter, and milk, and whisk well.
  • Gradually add dry ingredients to wet ingredients and mix well until dough forms.
  • Mix in chocolate chips.
  • Share and divide dough using a small cookie scoop and place on a baking sheet.
  • Cook for 20-22 minutes until the bottoms of the cookies are lightly golden brown.
  • Withdraw from oven and let cool slightly before serving.

  • Store: You can keep the cookies in an airtight container for up to five days.
