Poha is dear to many Indians and is one of those dishes that people on the Keto lifestyle tend to miss quite a bit. Do not worry, we are here with the keto version of this loved breakfast staple. Keto poha recipe is made of cauliflower which is just as amazing as the mainstream poha with greater benefits.

Poha is a staple Indian breakfast, that is made from a flattened and dehydrated rice flake. Its keto version is savory and spicy. The recipe is low carb, making it an ideal food idea for Ketogenic diet followers.

The original recipe uses flattened rice flakes, which will be replaced with grated cauliflower. Here Keto Poha is a refreshing recipe and ready in just 20 minutes.

INGREDIENTS

1) 200 g Cauliflower

2) 30 g Onion

3) 2 tbsp ghee

4) 5 g mustard seeds

5) 7 curry leaves

6) Pink Himalayan salt

7) ¼ tsp turmeric

8) 4-5 peanuts

9) 2 green chilies

10) A sprig of coriander

Instructions:
  • Add enough water to a saucepan to boil the cauliflower. Add in cauliflower and boil it for 5 minutes at medium flame.
  • Remove the cauliflower from the flame. Drain the excess water from the pan.
  • Now add the cauliflower into a food processor and pulse it till you get a rice-like consistency.
  • Heat a pan on medium flame, and add 2 tbsp ghee to it.
  • When the ghee becomes hot, add in curry leaves and mustard seeds. When it starts crackling, add in onion, green chilies, pink Himalayan salt, peanuts according to taste and turmeric, and cook for 3 minutes.
  • To the pan, add cauliflower rice, one-fourth cup water and cover the pan with a lid.
  • Cook the cauliflower rice, till it becomes soft.
  • Finish the poha with coriander, and squeeze lime juice.
  • Your delicious keto poha is ready to serve. Enjoy!!!
