Ingredients

1)  300 gm Aubergine

2) 50gm onion

3) 100gm tomato

4) 10gm garlic

5) 2 Tbsp ghee

6) 1 Tbsp butter

7) ½ Tsp Salt

8) ¼ Tsp Turmeric

9) ¼ Tsp Kashmiri red chili powder

10) 1 Green chilly

11) Salt to taste

12) Cilantro/Coriander for garnish

Instructions

1) Start by poking holes in the Aubergine skin with a knife and also make a few gashes and stuff with the garlic.

2) Roast the aubergine over the stove or in the oven for about 10-15minutes.

3) Once done, cover and let it cool. De-skin it once it has cooled and chopped it roughly till you have it properly mashed . 

4) Heat the ghee in a saucepan and fry the onions. Season with some salt. 

5) Once the onions have browned slightly add in a chopped green chilly and the tomato.

6)  Add in your turmeric and chili powder and cook for about 5 minutes till the tomatoes break down. (Add water if needed, but only a little) .

7) Add in the nicely roasted and mashed aubergine, season it with salt, and let it cook for another 2-3 minutes. 

8) Garnish with coriander and a full tablespoon of butter and serve with a Ketone balanced roti/naan.

9) Serve well and enjoy it with your family.
