Peanut Butter Chocolate Brownies –

Prep Time- 15 mins | Baking time- 25 mins | Total Time – 40 mins | Servings- 20 |

Ingredients –
  • 1/4 cup butter
  • 3/4 cup splenda
  • 3 eggs
  • 1/4 cup water
  • 1/4 cup canola oil
  • 1 tsp vanilla extract
  • 1 1/4 cup all purpose flour
  • 1/4 cup unsweetened peanut butter
  • 1/2 cup sugar free chocolate chips
  • 1 teaspoon baking powder
  • 1/2 cup unsweetened cocoa powder
  • Non stick cooking spray
Instructions-
  • Preheat the oven to 350 degrees Fahrenheit. Take a 9 inch square baking dish and coat it with cooking spray.
  • Take a medium saucepan and melt butter over low heat.
  • Removing it from the heat, whisk in sugar and water. To this, add the eggs, oil and vanilla extract and mix until combined.
  • To this mixture, add 1 cup of flour and baking powder.
  • In another small bowl, place the peanut butter and whisk in 1/2 of the above prepared batter.
  • Combine the remaining 1/4th cup flour with the cocoa powder in another bowl.
  • Add this to the plain batter along with the chocolate chips. Pour this batter into the pan that has melted butter.
  • Over the chocolate batter, add in the peanut butter batter and with the help of a wooden spatula, swirl the batters together.
  • Bake it approximately for 20 to 25 minutes and then allow it cool. Cut into bars.

Diabetic Brownies –

Prep Time – 10 mins | Cook Time – 20 mins | Total Time- 30 mins | Servings -12 |

Ingredients ( for brownies ) –
  • 1/3 cup melted butter
  • 1 tsp vanilla essence
  • 4 eggs
  • 1/4 cup almond flour
  • 1/3 cup coconut flour
  • 1/2 tsp baking soda
  • 1/3 cup unsweetened cocoa powder
  • Half cup monk fruit sweetener / erythritol
  • Half cup sugar free chocolate chips
Ingredients ( for toppings ) –
  • 2/3 cup sugar free chocolate chips
  • 2 tsp coconut oil
Instructions –
  • Line an 8 inch square baking dish with parchment paper and preheat the oven to 350 degrees Fahrenheit.
  • Whisk the eggs and melted butter together in a small bowl.
  • In another bowl, combine together the dry ingredients including coconut flour, almond flour, baking soda, sweetener and cocoa powder.
  • Mix together all the wet and dry ingredients and add the chocolate chips to it.
  • Pour this batter into the baking dish and spread it evenly.
  • Bake it for 20-25 minutes and then allow it to set and cool for 10 minutes.
  • With the help of the parchment paper, remove it from the pan and let it cool on a cooling rack.
Toppings –
  • In a small bowl, mix together the chocolate chips and coconut oil.
  • Melt it in the microwave. Stir in between and repeat the same till the chocolate completely melts.
  • Drizzle the melted chocolate on the brownies.

Black Bean Brownies –

Prep Time – 10 mins | Cook Time- 25 mins | Total Time – 35 mins | Servings – 9 |

Ingredients –
  • 2 eggs
  • 1/2 cup chopped Medjool dates
  • 2 cups cooked black beans
  • 1/2 cup cocoa powder
  • 2 tsp vanilla extract
  • 1/2 cup natural applesauce
  • 1/2 tsp baking soda 1/2 tsp salt
Instructions –
  • Preheat the oven to 350 F.
  • Line a 9 square inch pan with a parchment paper.
  • Stir the dry ingredients together , i.e. cocoa powder, soda and salt in a small container.
  • In a food processor, add the beans ,eggs, applesauce and vanilla essence. Puree it to form a nice paste till all the ingredients blend together.
  • Add the dry ingredients to this and blend it fully.
  • Bake it for approximately 20 – 25 mins until set.
