5 New Year's Eve Keto Desserts

Presenting you 5 New Years\’ eve Keto Desserts to start your new year\’s sweeter way. No longer need to crave desserts anymore, here are 5 amazing keto desserts:

 

1. KETO CHOCOLATE MOUSSE
INGREDIENTS 
  • 1 cup Heavy Whipping Cream
  • 1/4 cup Unsweetened cocoa powder, sifted
  • 1/4 cup sweetener
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon kosher salt                      
INSTRUCTIONS 
  1. Whisk the cream to stiff peaks using. 
  2.  Add in the cocoa powder, sweetener, vanilla, and salt, and whisk until all ingredients are just combined.                                             
  3. Makes 4 servings.  

 

 2. KETO CHEESECAKE FLUFF  
INGREDIENTS 
  • 1 cup Heavy Whipping Cream
  • 1 8 ounces brick of Cream Cheese, Softened
  • Zest of 1 Lemon
  • 1/2 Cup
INSTRUCTIONS                    

Make the Fluff

  1. Add the heavy cream to a stand mixer and whisk until stiff peaks are formed. You can also use a hand mixer or whip by hand with a whisk.
  2. Remove the whipped cream to a separate bowl and set it aside
  3. Add the softened cream cheese, zest, and sweetener to the stand mixer bowl and beat until smooth.
  4. Pour the whipped cream into the stand mixer bowl with the cream cheese.  Stir gently with a spatula until it is halfway incorporated.  Use the stand mixer to finish whipping until smooth.
  5. Serve with your favorite topping.  

 

3. KETO CHOCO-CHIP COOKIES
INGREDIENTS                                              
  • 3/4 cup softened butter or coconut oil
  • 2/3 cup Granola sweeter 2 Eggs
  • 2 tsp Vanilla Extract
  • 3 cups almond flour 1/2 tsp Baking soda
  • 1/2 tsp Kosher salt
  • 1/2 9 Ounce Bag sugar-free chocolate chips                                                                                                                                                                                                           

EQUIPMENT

  • Cookie scoop
INSTRUCTION 

     Preheat oven to 350F

  1. Add softened butter (or coconut oil) and swerve sweetener in a stand mixer (or hand mixer with a large bowl), mix on medium until combined
  2. add 2 eggs and vanilla and mix until combined
  3. combine almond flour, baking soda, and salt in a medium bowl
  4. add dry ingredients to wet ingredients and mix until combined
  5. Fold in Lily\’s Chocolate Chips
  6. Scoop 18-21 cookies onto a lined baking sheet (you may need 2 depending on how big your sheets are).  Flatten them out by pressing down on the top slightly.
  7. Bake for 10-12 minutes
  8. Let cool on the cookie sheets for 30 minutes. These will stay soft and delicious for at least 4 days in an airtight container. See notes for freezing instructions. 

 

 4. CHOCOLATE KETO PIE

INGREDIENTS

  • 1 Almond Flour Pie Crust 
  • add, 1 cup Granular Sweetener 
  • 1 tablespoon Cornstarch
  • 2 teaspoons xanthan gum 
  • 1/4 teaspoon Kosher salt              
  • 3 Egg yolks                                                                                                                                                                                                           
  • 1 teaspoon Vanilla extract
  • 2 cups Unsweetened Almond Milk
  • 3 Tablespoons Cocoa Powder
  • 6 pieces Unsweetened bakers chocolate, chopped (42 grams)
  • 2 Tablespoons Butter
INSTRUCTIONS
  1. Make the pie crust and set it aside to cool  
  2. Add the Swerve, corn starch, xanthan gum, and salt to a medium saucepan and whisk to combine.  Add the egg yolks, vanilla, and almond milk, cocoa powder, and whisk to combine,  Heat over medium heat.  
  3. When the mixture starts to bubble and is thick like pudding, remove from the heat and stir in the chopped chocolate and the butter until completely melted.  
  4. Pour the chocolate pudding into the pie crust and let it set up in the refrigerator for atlas 4 hours. 
  5. Slice and serve with whipped cream  

 

5. KETO MUG CAKE ( CHOCOLATE, VANILLA & PEANUT BUTTER) 
INGREDIENTS
  • 1 Tablespoon Butter, melted
  • 1 Tablespoon Coconut flour or 3 Tbsp Almond flour (click here to see my favorite brand)
  • 2 Tablespoons Granular Sweetener (Click here to see my favorite on Amazon)
  • 1 Tablespoon Cocoa powder (For Chocolate Version)
  • 1 Tablespoon Sugar-free Peanut butter (For Peanut Butter Version)
  • 1/2 teaspoon Baking powder
  • 1 Egg, beaten
  • Splash of vanilla
  • 1 Tablespoon Sugar-free Chocolate Chips (Click here to see my favorite brand on Amazon)

INSTRUCTIONS

For Chocolate                                                                                                                                                                                                       

In a microwave-safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, cocoa powder, baking powder, vanilla, and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar-free chocolate chips of your choice. 

For Vanilla

In a microwave-safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla, and beaten egg.  Mix well.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar-free chocolate chips of desired or mixed in before cooking.

For Peanut Butter

In a microwave-safe coffee mug, melt the butter in the microwave for 10 seconds.  Add the coconut flour or almond flour, sweetener, baking powder, vanilla, and beaten egg.  Mix well. Swirl in the peanut butter.  Microwave on high for 60 seconds, being sure not to overcook.  If you overcook it, it will be dry. Top with sugar-free chocolate chips of your choice.
