This Instant Pot honey mustard chicken is so simple, made with ingredients that you probably already have in your kitchen, and perfect to make on the busiest weeknights! You can use chicken breasts or chicken thighs, and the sweet and tangy marinade smothers the chicken for a delicious and simple meal.

Ingredients
  • 1/2 cup honey
  • 1 cup water
  • take 1/2 cup of yellow mustard
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • take 1/2 teaspoon of garlic powder
  • salt and pepper to taste
  • 4 68 ounce boneless skinless chicken breasts thawed or frozen
  • 1 teaspoon cornstarch or tapioca starch
Instructions
  1. Combine honey and water in the bowl of the instant pot. Next, turn the instant pot to sauté, and leaving the lid off, stir together until the honey dissolves, about 5 minutes.
  2. Next, add the mustard, Italian seasoning, salt, pepper, garlic powder, and paprika and stir to combine.
  3. Set the steam rack inside add the chicken breasts to the Instant Pot and coat with the honey mustard sauce.
  4. Seal the lid and turn the steam valve to the sealing position.
  5. Set Instant Pot to pressure cook/manual, high pressure. Set the cooking time to 8 minutes for a medium-sized 6-8 ounce chicken breast. Then set the cooking time to 12 minutes if the chicken breast is frozen.
  6. The Instant Pot will take about 10 minutes to come to pressure and then will start counting down the cooking time, so 18 minutes total.
  7. When it beeps to let you know the cooking time has finished, carefully quickly release the pressure by using the handle of a long spoon to turn the steam valve to venting.
  8. Finally, remove the lid then remove the chicken and set it aside on a plate.
  9. Add 1 teaspoon of tapioca starch or cornstarch with 1 tablespoon of water.
  10. Add to the honey mustard sauce in the instant pot and turn on sauté.
  11. Allow to boil and thicken for 2-3 minutes then add the chicken back to instant pot and coat chicken with sauce.
  12. Serve with rice, vegetables, or quinoa.
