Avocado Mango Salad

Avocado mango salad is an instant healthy salad recipe made with avocados and mangoes. Have tried quite a few recipes with avocados and this salad is a recent try for everyone. As avocados are bland in taste, combining them with mangoes gives a great taste.

Ingredients
  • 2 large ripe mangos, peeled and diced
  • 1 ripe avocado, pitted and diced
  • one-fourth cup chopped or crushed walnuts
  • 1/4 cup red onion, diced
  • 1/4 cup chopped fresh mint
  • 1 tablespoon hemp seeds
Dressing
  • Juice from 1 whole lemon
  • 2 tablespoons olive oil or avocado oil
  • 2 tablespoons pure honey*
  • 1/8 tsp salt (or to taste)
  • 1/8 tsp pepper
Instructions
  1. Whisk together or blend the avocado oil or olive oil, lemon juice, honey, and salt and pepper to prepare the dressing.
  2. Add the diced mango, diced avocado, walnuts, red onion, mint, and hemp seeds in a large bowl.
  3. Mizzle with the dressing and toss everything to combine.
  4. Divide between 2-3 plates.
  5. Optional: Pair with grilled chicken breast or baked salmon and goat cheese or dairy-free feta cheese!
  6. Enjoy!

Notes
  • Choose ripe avocados and mangoes if possible and dice them into even, bite-sized cubes. Slicing the avocados at the very end just to avoid browning.
  • You can use cherry or grape tomatoes.
  • Slice your mangoes and avocados into bite-sized cubes, for easy eating!
  • Mix everything together lightly without crushing the avocados.
  • Make sure to add the avocados just before serving, to avoid them going brown
