Keto Egg Nog

Milk punch or egg milk punch is the second name for Keto Egg Nog and is a rich, chilled, sweetened beverage.

Traditionally it was prepared using milk, cream sugar, whipped egg whites, and egg yolks. Some people prefer to add brandy, rum, whisky or bourbon to the drink or almond milk instead of regular milk.

Flavour of cinnamon and nutmeg goes well with Keto Egg Nog.

Generally the traditional recipe of egg nog has regular milk as a major component. Almond milk and coconut milk are the best low carb alternatives if you want to prefer keto friendly Egg Nog.

Similarly, the regular sugar is not keto-friendly so one cannot use in keto egg nog. Instead, you can use non-caloric ( Keto friendly sweeteners). Those are erythritol, xylitol and allulose.

Ingredients ( As per 6 servings):

5 Egg yolks
80 g granulated Erythritol.
480 ml unsweetened Almond milk
240 g heavy whipping cream.
1 tsp nutmeg
1/2 tsp Cinnamon.
1 tsp sugar-free vanilla extract.

Instructions:

To a medium sized saucepan add almond milk, heavy cream, cinnamon and nutmeg and simmer for about 8-10 minutes. Turn off the heat and set aside while you prepare the yolks.
Add egg yolks and sweetener to a large bowl and, using a whisk or an electric mixer (easier), beat them until light, fluffy, and most of the sweetener has dissolved (if using erythritol, some granules will remain).
Slowly add the hot mixture into the egg and sugar mixture.
Add everything to the saucepan.
Cook over medium/low heat for roughly 8-10 minutes.
Remove from heat and pour onto a medium mixing bowl. If you want you can add in vanilla. Cover and transfer to the refrigerator to chill.
Your eggnog will continue to thicken while chilling. If you find it thick you can add a little nut milk until it reaches the desired consistency.
