INGREDIENTS

1) Paneer cubes

2) 50g bell peppers

3) 5 mushrooms

4) 50g green beans

5) 50g broccoli / cauliflower

6) 15 g butter

7) 2 pods of finely chopped garlic

8) Salt

9) Black pepper

10) Half tsp oregano

11) 1/4th lemon

INSTRUCTIONS

1) Finely chop ball peppers, mushrooms, beans, broccoli/ cauliflower.

2) Add the diced vegetables to a cooker with one glass of water.

3) Cook until 1 whistle on high heat, and then low heat for 5 minutes.

4) In another saucepan, add butter, once the butter melts, add chopped veggies into it and add half spoon oregano in it and cook for 30seconds.

5) Squeeze a lemon in the mixture. Pour this tempering into the cooker.

6) Add paneer cubes and cook for two minutes. 

7) The soup is ready to serve, Enjoy!

1) The greener your soup, the low in carbs it will be. 

2) The best part about vegetable soup is you can make how you want it and use it as inexpensive meal preps. Pour serving sizes into airtight freezer containers or ziplock bags, then simply thaw out and reheat when needed.
