Use crisped rice cereal to make the crispiest chicken version ever. This Rice Crispy Chicken is an uncomplicated family dinner recipe that the kids will beg for! It is a quick main dish that even your pickiest eaters will enjoy. The rice Krispies give the chicken a nice crunchy and buttery coating that is delicious!

 

Here the two main ingredients are rice Krispies and chicken. Rice Krispies are just a simple, healthy breakfast cereal and you can have it any day in your breakfast meal. Whereas chicken is the healthiest portion and a great source of protein.

Ingredients
  • 4 skinless and boneless chicken breast fillets, weighing about 200g each, cut into goujons
  • 250g Rice Krispies
  • Butter, for greasing
  • Mayonnaise, for dipping
  • Salt and freshly ground black pepper

 

Instructions

 

  1. Warm the oven to 200°C and lightly grease the baking tray.
  2. Set the cereal and some salt and pepper in a bowl and crumble with your fingers until lightly crushed.
  3. Pour in the mayonnaise and seasoned crushed cereal mix in 2 separate shallow bowls, ready for dipping.
  4. Immerse each piece of chicken first in the mayonnaise, shaking off any excess, before dipping in the crushed cereal.
  5. Set down the dipped chicken on the prepared baking tray and bake in the preheated oven for 35 minutes until golden, turning half way through cooking.

This Rice crispy chicken is good to serve with honey mustard sauce.  When they’re baked in the oven the cereal gets golden brown and the juices from chicken and cereal create a caramel crispy coating that’s to do for. Dip that in the honey mustard and you won’t regret this 30-minute meal.
