Ingredients (Servings 4)

  • Large red-skinned potatoes (675g)
  • Olive oil (2 tbsp)
  • Cherry tomatoes (550g)
  • Rosemary (3 sprigs)
  • garlic cloves (3, smashed)
  • Salt (as per taste)
  • Pepper (as per taste)

Instructions

Rosemary Roasted Potatoes And Tomatoes

  • Place a baking sheet in the oven and preheat it to 450 degrees fahrenheit (230 degrees celsius)
  • Now cut the potatoes (lengthwise into eighths).Once done, toss the potatoes with the olive oil, cherry tomatoes, rosemary, garlic cloves, and add salt & pepper.
  • With the cut side facing down, place on the now preheated hot baking sheet and roast for 15 mins. After 15 mins, flip and roast for another 10 mins.
  • Serve hot!
