  • 150g Zucchini
  • 2 Tbsp Coconut Oil
  • 1/2 Tsp Cumin Seeds
  • 1 Tbsp Ginger-Garlic Paste
  • 2 Chopped Green Chilies
  • Asafoetida
  • 3-4 Curry Leaves
  • 30g Onions
  • 1/2 Tsp Turmeric Powder
  • 1 Tsp Coriander Powder
  • 1/4 Tsp Garam Masala
  • 1/3 Tsp Amchur
  • Pink Himalayan Salt
  • Coriander

Instructions
  • Wash and cut zucchini into 1/2 inch long pieces.
  • Heat a pan with coconut oil and add ½ tsp cumin seeds, let them crackle.
  • Then add 1 tbsp ginger garlic paste,2 chopped green chilies, asafoetida,3-4 curry leaves and saute for 30 seconds.
  • Add onions and saute till they turn light brown in color.
  • To the pan now add chopped Zucchini chunks,½ tsp turmeric powder,1 tsp coriander powder,¼ tsp garam masala, ½ tsp amchur, and Himalayan salt to taste.
  • Mix everything well. Cover and cook for 3-4 minutes with occasional stirring.
  • Once cooked garnish with coriander leaves and serve hot with almond roti or caulirice.
